This is one of my favorite dressings ever! I love the freshness of lime paired with the creaminess of the avocado. This dressing is perfect with my Salmon Herbed Hemp Rissoles. Did you know that avocados contain not only 21 grams of fat, but also 13 grams of fiber! This means that avocado also helps to feed our good gut buddies in our microbiota.
Ladies, please welcome healthy dietary fats back to your table, as they are imperative for our endocrine (hormone) system, immune system, and optimal brain function. Clinical research shows that individuals who consume healthy dietary fat have reduced the risk of neurodegenerative diseases (dementia). Those who consume low fat or cut out healthy fat increase their risk for cognitive decline and Alzheimer’s.
This dressing is bright, zesty and fresh with all of the creamy feels that leave you satiated and satisfied. It dresses up any boring old salad into one that you will likely crave. It makes a great dip too with veggie crudités (a fancy word for veggie sticks!) I love using Primal Kitchen’s Avocado Oil Mayo but feel free to use your favorite mayo just check that the ingredients are minimal and clean.
- 60g ½ Small Ripe Avocado
- 60g ¼ Cup Filtered Water
- 55g ¼ Cup Mayonaise
- 45g 3 Tbsps Lime Juice
- 8g 1 Tbsp Cilantro, packed, chopped
- 5g 1 Garlic Clove
- 2g ½ tsp Apple Cider Vinegar
- 3g ½ tsp Unrefined Salt
- In a high-speed blender, blend all ingredients until creamy smooth.
Storage: In an airtight sealed container in the fridge for up to one week.
